In trying to find a great vacuum pump for brake assist I came across -

SSBC Vacuum Pump
Vacuum Pump Brake, Thomas 12 VDC, 1/10 hp
RV Towing Products Vacuum Pump
Cebi MES-DEA 70/6E Vacuum Pump
EV Source Vacuum Pump

The MES-DEA pump is supposed to be the most quiet, do I assume it's probably the best suited?

You could be compared to the guy who asks how big a truck should I buy.
That is decided by the load.

Your first consideration should be how much vacuum do I need ie what is the cubic feet per minute - CFM -and what vacuum or better yet what absolute pressure do I need to pump down to?  If you are lucky the factory shop manual may have some values.

If you have DC series motor with essentially no dynamic braking and NO control of what you do have then I would have a vacuum gage on the dash.  You are going to need all the braking power you can get and it might be a good thing to have the gage so you know when to jump before going off a cliff.

given the above I would have a good size pump and the heck with the noise and teh last concern would be price - it is really nice to have brakes.
